The Galley Department in a cruise ship is responsible for preparing all meals and snacks served on board the vessel. The department includes various positions such as chefs, cooks, bakers, pastry chefs, and kitchen assistants. The galley is divided into two main areas – the hot galley and the cold galley. The hot galley is responsible for preparing cooked meals, such as vegetables, fish, soup, and grilled items. The cold galley is responsible for preparing baked goods, pastries, and buffet items. The Galley Department operates around the clock to ensure that guests and crew members are served delicious and high-quality meals throughout their voyage.


ASSISTANT COOK

An Assistant Cook in a cruise ship is responsible for assisting the higher-level culinary staff, including the Commis 1, Commis 2, Demi Chef De partie and Chef De Partie, in the preparation and cooking of various dishes. They help in organizing and preparing the mis en place, which includes measuring and mixing ingredients according to the recipe to prepare soups, salads, gravies, desserts, sauces, and casseroles. In addition to food preparation and cooking, the Assistant Cook also performs other tasks such as washing, peeling, cutting and shredding fruits and vegetables. They may also be responsible for butchering chicken, fish, and shellfish, as well as cutting, trimming and boning meat prior to cooking or serving. ASSISTANT BAKER- PASTRY
An Assistant Baker-Pastry in a cruise ship is responsible for assisting the Baker Supervisor and the Pastry Chef Supervisor in the preparation and cooking of all bakery and pastry products, respectively. This includes measuring and mixing ingredients, kneading dough, cutting, shaping, and decorating pastries, as well as baking and cooking products such as bread, croissants, muffins, cakes, pies, and other desserts. The Assistant Baker-Pastry also ensures the cleanliness and maintenance of the bakery and pastry stations and assists with inventory and ordering of supplies.
